A mouth infection that no medical professionals could figure out what it was. For an entire year I lived with horrendous pain in my mouth and lost over 60 lbs due to the fact that it hurt so much to eat. Then, while still dealing with that nonsense I fell and broke my damn arm in two places. And now I have to have 7 teeth pulled because the dentist says the infection is coming from them so hopefully after getting the oral surgery my mouth will finally be ok again. Just got my arm out of a cast into a brace I can take on and off. Be great to have my arm and mouth both back in good shape.

My theory is either young and nervous because they are inexperienced or old and nervous because their reflexes and reaction times aren’t what they used to be.

Then there are just a-holes that do it because they can and want to make a point. Same reason people in the US drive at the speed limit in the left lane when there is no one in the middle or right lanes preventing them from moving to the right and getting out of the way.

My parents have $2.1-2.5 million in savings(uninvested). $650k-$900k in antiques and other physical assets, and around $1.6-$2.4 million in real estate.

They are looking about moving country, selling all real estate and antiques and all assets and buying a house in the US (don’t need one more than $1m in value ish) and investing all of their savings.

What are good options for them to invest in?

How should we go about this process?

EDIT: also for both my parents combined they have roughly a $62,000 a year pension for them to both live on separate from this

You're making a hell of a lot of assumptions here. As u/rx_bandit90 said - there is a process for dealing with situations like this. All we know is the family said they opened a gofund me - they shouldn't even need one. You could just as rationally assume they're trying to profit off her misfortune while planning the lawsuit.
