Had a very chicken-like texture. The smoke flavor didn’t penetrate the meat as well as I would’ve liked, but I think the bacon wrap may have contributed to that. Tenderness was definitely not an issue on this gator.

Heat up 1 tbsp of olive oil and add 1 diced onion and 1 cubed zucchini in a pan, add salt and black pepper. In another pan stir 300 grams of shrimps with 2-3 cloves of garlic on low heat for 1-2 minutes. Boil the pasta ( I like to use linguine) and add a bit of pasta water to the zucchini pan. When the pasta is cooked add it to the zucchini pan and add the shrimps at the end. Mix and serve. You can add a bit of chilli flakes if you like spicy.
