Wild caught or farmed?Cuz wild is the best freshwater fish around,Farmed is mediocre.BTW,my G-Pas exact recipe.He grew up in Arkansas,before the depression.Got by on fish(mostly catfish) and small game.

I understand how you could associate certain dishes from that region with seafood.
In this case I'm referring to Calabrian chili peppers, which are one of the two types of chili pepper I used in the chili.

Potato starch makes the difference, gives the chicken skin a “chewy” texture with lotta crisp.
